I have finally finished mowing, took me 4 days because it was too hot to stay with it for very long at a time. Still have some weed eating to do.
Amber and Derrick Crosby were here on Saturday to see grandmom Connie Zalenski and show off that new baby girl, Shae.
There was a school board meeting at Lane School on Monday at 5 p.m. The first for this year. I had planned to attend, but forgot, I wanted to hear how the school is going to pay off this money that they have from taking in the Farris School children. I hope someone was there to report this and we will find out what will happen. Especially if it will be on our taxes.
Since I have so little news I will leave you with a recipe.
Avocado Corn Salad:
1 lb Cherry Tomatoes halved or quartered.
3 ears of corn, cooked and grilled and cut off the cob.
2 avocados peeled, pitted and sliced.
1/4 red onion small thinly sliced.
2 T. extra virgin olive oil.
1/4 cup chopped cilantro.
2 to 3 T lime juice.
2 garlic cloves pressed or finely minced.
Salt and pepper.
In a large salad bowl, combine tomatoes, corn, avocado, red onion, cilantro and garlic. Drizzle the top with olive oil, lime juice, salt and pepper and toss.
You can buy corn already grilled in the frozen food counter.
